Easy Cranberry Walnut Bread

I toyed with the title of this post a little because I was trying to figure out how much information to include in the title. I wasn’t sure “cranberry walnut bread” would suffice; would people realize this will only take you about 10 minutes to make? Does the addition of “easy” cover it, or should I add “quick” to the title, too? And while I’m at it, I should probably mention that it’s “no knead,” right? Well, I finally gave up and just left it at “easy,” because that’s exactly what it is. It requires a minimum of effort, but what you’ll get out of it is maximum taste.

Some of you may remember that this falls in line with my New Year’s Resolution, and even beyond the walnuts, it’s healthy as it can be: whole wheat flour, (unsweetened) applesauce, canola oil. But no one will believe how healthy it is…or how little time you spent making it. The whole wheat and cinnamon give this an earthy flavor, and the cranberries add a bright pop of flavor. Not to mention the crunch of the walnuts! And though this bread was pretty perfect as-is, next time I think I’ll add in some orange juice and zest–just a little bit, just to add to the wow factor.

My preference is for a warm slice with a pat of butter, but I also ate a piece this morning that was neither warmed nor buttered, and it too was wonderful. Either way, it’s a treat. (True story: I ate so much of this (slathered with butter, of course) that I had to add another mile and a half to my run yesterday!) Just keep it to yourself that it was easy and healthy–they’ll never guess on their own!
