Quesadillas & Good News!
As I mentioned, my mom was in town last week and we did some cooking together. Since my mom was my first teacher when it comes to cooking and baking, I always like going back to the kitchen with her. But she’s visiting me from Texas, and I don’t want to stay all day in the kitchen (not to mention the fact that she doesn’t want to spend all day in the kitchen). And of course, there’s the heat to contend with.
So we went to one of our favorites: quesadillas. There are so many ways to make these Tex-Mex favorites, and you can really go crazy with what you put inside. And as for toppings, salsa or pico de gallo work well, as does sour cream. They’re so easy to make, and yet so filling and delicious that they make a perfect lunch or dinner. I named these quesadillas “green” because of the veggies we put inside: green onions, avocados, and jalapenos. I know, I know, not a terribly creative name, but I had bigger and better things on my mind.
Speaking of which…There’s a very special announcement I’ve wanted to share for a few weeks, but I felt like I needed a little time to adjust. My life saw some dramatic and rapid changes in the month of July, and I’m so excited to share them with you now. The short story is this:
- I quit my job, because
- I took a position that will allow me to focus on getting my PhD, and
- that will also allow me to focus on my freelance writing, and (if that wasn’t enough)
- I became an ACE-certified personal trainer at the end of July, too!
Told you I had a lot of changes in July! I’m so excited about my new position (which I’m going to keep to myself a while longer) and about being able to focus more on my doctorate, my writing, and on personal training, too! I’m going to be very busy in the next few years, but it’s all stuff that’s fed by my passions, so I’m looking forward to it.
And, of course, with all that running around, I’m going to need some good fuel. And that brings us back to these quesadillas: they are yummy and filling, but most of it is healthy. There’s a lot of veggies swimming on the inside, and topped with pico de gallo, you’ve got even more veggies on top. I used whole grain tortillas, too, which made it healthier, and added a layer of nutty, earthy flavor to the bright flavors of the cheese and veggies.
Yum- those quesadillas look incredible with all that fresh pico piled on top! Congrats on all your big changes 🙂

My mom and I actually went two different ways with the toppings: while I’m obsessed with pico, she’s all about the salsa, so that’s what she put on top. Either way works, I guess, but pico’s just my cup of tea.

Congrats on all of your changes in July – big month! These quesadillas sound perfect! I have never filled mine with avocado for some reason. I love the stuff just never thought of it as a filler – now I will for sure!
I use it in every which way: as a filler, on its own, as a topping, in baked goods…I’m not sure there’s a way to eat avocados that I haven’t tried! 🙂
