Spinach and Cream Cheese Dip
I love simple foods. I love throwing something together with minimal effort and just a few ingredients and then somehow having it turn out delicious. I love when people don’t believe me when I tell them how easy it is to make something–like this. Or this. Or even this.
And this dip is no exception: an ingredient list short enough to make even the slimmest wallet sing, a dish that can be put together in under five minutes, a recipe that doesn’t involve turning on the oven or stove. Who could ask for more? Well, I did. Namely, versatility. As you know, I love recipes that can be used in many different ways, and this is no exception. Yes, it makes a fantastic dip with crackers, bread, or chips (especially if you’re watching your team fight their way to their first championship–woohoo!). But I used it as a filling in a tartlet shell, too, and what a fantastic little lunch that made! Or how about stirring it into a pasta dish? And, yes, that was me schmearing it on my bagel the other morning.
There isn’t a soul in the house who won’t be thrilled when you bring this out. It’s sweet and creamy: the cheese, spinach, and tomatoes blend together to create a flavor profile that is so much more than the sum of its parts. Sure, alone each ingredient might be good, but together? They’re outstanding. (Not unlike a certain basketball team. Yeah, I know it’s been a week. Nope, still not down from my high.)
