Rice and Green Peas/Matar Pulao
My friends all know that I love Indian food, and I love to cook Indian food. Matar pulao is a fantastic Southern Indian dish of rice and peas with spices and often cashews. This is not, strictly speaking, matar pulao. Instead, this is a loose translation, an “inspired by,” and I hadn’t planned on posting it. But it turned out tasty enough that I couldn’t keep it to myself.
Despite its name, the star of this show really isn’t the peas or the rice; it’s the rich combination of spices. Freshly ground or from the store, these pack quite a whollop! Their taste–deep and aromatic–reminds me of what it’s like when you take a breath into your mouth on a cold night. This is complemented by the sweet, sweet taste of the peas.
Basmati rice is traditionally used in matar pulao, but feel free to experiment with different types of grains; I could see using couscous or quinoa in a dish like this.
