Spinach & Red Bean Salad with Triple Sec Vinaigrette
Yep, you read that title right: Triple Sec Vinaigrette. After a week that included a seriously busy schedule, a camera lens that had to be replaced, and a hip injury, it was time for me to break open the liquor cabinet. But instead of drinking myself into oblivion, I decided to make a vinaigrette. (Ok, maybe I also had a Stoli neat.)
This was a great use of the Triple Sec I had in there: you’re looking at a relatively basic orange vinaigrette with a kick from the Triple Sec. (Ok, technically, I used clementines because that’s what I had on hand, but it’s the same flavor family.) Light, fruity, and a little wild–what more do you need from your salad dressing?
The salad itself is a great mix of flavors and nutrition: the spinach, beans, and mushrooms combine their earthy tones, and they’re offset with the sweetness of the tomatoes and the dressing. And thanks to the beans, this salad is full of protein as well as veggies, which means that it can make a great, light lunch.
