Lemon Cake

With a certain wedding last week, I was in the mood for something that would go well with tea. You know, something light and delicious. Subtle and sophisticated. Simple and timeless. Not unlike a certain bride’s celebrated style.

So here’s what I came up with: a lemon loaf cake to rival the one I’m addicted to at a certain coffee store chain. Theirs is delicious, but dense (it’s a pound cake, after all) and laden with calories, saturated fat, and ingredients that I can’t pronounce. Fabulous, if you’re looking for a once-in-a-while treat, but not great on a regular basis.

This one is a little better for you, and a little more ok for a regular treat. It’s lighter, vegan, and still fantastically sweet. There’s a reason I only have one photo–it came and went so quickly I didn’t manage to get another one! I did, however, cut myself a slice and pour myself a cup of tea and enjoy Friday’s festivities.
