Pumpkin Coconut Soup

Spring keeps trying to peek through, but the cold weather just keeps hanging on. I’ve also been working like crazy–this is the busiest month of the year for me at work–and craving comfort food. And what says comfort more than a warm, creamy bowl of soup on a cold day?

So here’s what I came up with to satisfy my soup craving: sweet, sweet pumpkin and coconut, infused with the earthy warmth of nutmeg and and a tiny zing of spice from cayenne. It’s smooth and rich and tastes like a cozy old pair of flannel pj’s feel.

It’s no surprise–from the name or the recipe–that pumpkin and coconut are the primary flavors here. They’re both sweet flavors and together they’re too one-note for my taste. But with the kick of spice from the cayenne and mustard, and the balancing flavor of the salt, we’ve got ourselves a warm symphony.
