After my Frito Pie adventure, I had a can of beans left over. I’ve been working recently on coming up with some yummy vegan appetizers (so many appetizers involve meat and/or cheese) for people to use, and I decided to experiment a bit to see if I could come up with a simple, elegant, and delicious hors d’oeuvre out of the humble pink bean.
I think I rose to the challenge! Simple? Check. Elegant? Check. Delicious? Well, I couldn’t stop scarfing them down, so I’m going to put a check next to that one, as well.
These beans have so much going on: the light flavor of the lemon and cilantro; the sweetness of the tomatoes; the spice of the jalapeno. Pile all that flavor on to a crunchy cracker (I used Triscuits) and you’ve got yourself a little powerhouse of an appetizer. These would also be great wrapped in tortilla strips as mini-burritos. Or, if you’re not looking for an hors d’oeuvre, try topping a baked potato with these. There are about a million possibilities I can think of. Chime in if you have other ideas!
