Spring Green Lemon Pasta

As time shifts and the weather warms up (it was in the 70s here last week!), I start craving light and fresh food. Green food. Spring food. This fits the bill perfectly: it’s got all the flavor and crunch that beckons in the new season.

This is a wonderful mix of flavors: the earthy flavor of the whole wheat pasta, the spice of the black pepper, the sweetness of the green beans and tomatoes, the lightness of the lemon juice. And the textures! Between the silky coating of the butter on the pasta, the crunch of the greens, the juiciness of the tomatoes, each spoonful offers a surprise.

This makes a great lunch or light dinner, with subtle hints of lemon pepper flavor and a definite tip of the hat to spring. Perfect to enjoy on the patio as you soak up the spring sunshine. Or for noshing on when it’s cold and grey and you want to remember the spring sunshine. Either way, I’m a fan.
