St. Patrick’s Potatoes
For all of you afraid I’d forgotten my Irish-American roots, what with my focus on Italian food last week, here’s a little something to celebrate a belated St. Patrick’s Day: green and white potatoes!
The green here is spinach, and it works strangely well in mashed potatoes. The potatoes–I use russet–have a starchy texture and an earthy flavor. The spinach adds a layer of sweet on top of the flavor. And while the spinach loses its crunch in the heat of the potatoes, it’s still got a contrasting texture, which is nice.
Thanks to both the potatoes and the green of the spinach, these are the perfect festive St. Paddy’s Day treat. But they’d be just as good on your Thanksgiving table. Or, for that matter, on your Random Thursday table.
