Garlic Butter/Garlic Bread

Delicious Italian sauce: Check. Eggplant medallions: check. But what Italian feast would be complete without garlic bread? Since I’m not a fan of tiramisu (I know, I know–go ahead and slaughter me in the comments section), this is going to wrap up our easy Italian meal plan.

And what a way to wrap it up! If you like garlic (I do), this is sublime. I can’t claim that this has a subtle flavor; it’ll pretty much knock your socks off. But this is, without a doubt, the best garlic spread I’ve ever had. In fact, it’s so good that I routinely have dinner guests ask how I made it. They think that, because it tastes so good, it’s complicated. When I explain how simple it is, they almost don’t believe me.

But, as you know, I believe in the beauty of simple food. And this dish is as tasty as it is simple. In fact, though there are about a gazillion ways to use this garlic butter, but my favorite is the simplest: spread it on bread (I like baguettes for this) and stick it in the toaster oven for about 5 minutes, until everything’s bubbling and just starting to brown.

As I mentioned above, garlic is the predominant flavor here, and it’s not going to be missed in this butter. If you want a less loud taste, you can always cut back on the garlic. And if you’re serving this to your sweetheart, you might want to follow up with a breath mint before kissing. Then again, if you both have garlic breath, who cares? 🙂
