Quinoa Stuffed Tomatoes
This dish has a bit of a personality disorder: is it an appetizer? a side dish? Is it sweet? spicy? a vegetable? grain? carb or protein? Truth is, it’s a bit of all of those, and more.
These stuffed tomatoes seem, at first, very simple. They are easy to make, and it would be an understandable mistake to assume at first that they’re ordinary. But one bite, and wow–that assumption is thrown out the window! The jalapeno gives this dish a great kick, and the light, sweet tomato shell offers a good balance to the spice. On top of that, the quinoa gives its distinct, bittery-earth taste. The flavors are complex, but not too sophisticated. The kind of thing you can serve on your fine china, but don’t have to.
These also defy categorization: they could be either an appetizer or a side dish. The quinoa provides protein as well as carbs. Nutritionally speaking, they’re like an entire little meal in a cute package. (I actually did eat these for lunch one day…all four of them!)
Complex, simple…who cares? The bottom line is they taste good. And I, for one, don’t really care about anything else.

I’ve been looking for more quinoa recipes. I’ve had it straight up, like rice, but I want more creative recipe! This sounds great! Imagine with farm fresh tomatoes, oh man!

That’s look so good, in india we make this type of stuff tomato but we stuffed paneer or potato but i never try this way thanks for sharing ur idea i ‘ll try this.
