Spicy Broccoli Citrus Soup
I’ve been feeling a little under the weather lately, and that (plus the cold weather) has me craving soups of all kinds. As if you hadn’t noticed. I love broccoli, and I love spice, and so this soup in particular was a match made in heaven for me.
The citrus flavor of this soup is powerful, but it’s balanced by the spice of the red pepper flakes and the creamy taste of the coconut milk. Add to the top of that the earthy flavor of the broccoli and you’ve got yourself a winner.
This soup is on the lighter side: it’s not as creamy as some soups, and the flavors aren’t as deep as others. Instead, it’s got a bright taste and doesn’t make you feel weighed down. It makes, in short, a perfect soup for when you’re sick. And, despite the fact that I made it in February, it would be a delightful spring or summer soup. But don’t wait until then to make it: it’s the mois d’amour, after all, and red pepper and coconut milk are both aphrodisiacs.
This would be particularly scrumptious paired with some rustic homemade croutons. Or topped with freshly shaved parmasan. Or any number of other ways. As for me? I ate it with a grilled cheese (ok, grilled rice “cheese”) sandwich. A simple, delicious lunch that warmed me to my very toes.
This makes such a refeshing change to the classic broccoli & cheese soup. Love your healthy combinations with the chili and citron. I had no idea that coconut milk was also an aphrodisiac! Now THAT is cheeky 😉
Hope you’re feeling better after that winner!
That’s an interesting and refreshing twist !
I would never have thought of adding orange juice into a soup recipe and i really like how you served it in a mug. It must have made it easer to drink it.
What a fabulous soup. I love the citrus touch. This would definitely make me feel better. 🙂
Thanks to all y’all for your words of encouragement. I am feeling better now. Not sure if it was the orange juice in this soup, or if it just ran its course, but I’m back to my usual (brownie-chomping) self. 🙂
